Quick and Easy Pizza

Perfect for a busy mom on the go, it can be made with a variety of cooked toppings, but I chose smoked salmon because that's what I had in the fridge.

Ingredients:
1 tortilla
4 slices smoked salmon
2 tbsp chopped pineapple cubes
4 tbsp mozzarella cheese
4 tbsp parmesan cheese
1 tbsp garlic powder
1 tbsp oregano leaves
3 tbsp tomato puree
1 tbsp chopped coriander leaves

Method:
1. Put the tortilla in a hot oven at 170 Celcius, and let it toast till almost crispy, which is for about 5 minutes. The tortilla will puff up slightly, so when u see it happening, press it down with a spatula.

2. Take it out of the oven. Spread on the tomato puree, sprinkle the garlic powder and oregano leaves.

3. Add a layer of mozzarella cheese and lay down the smoked salmon slices and the chopped pineapple cubes.

4. Add another layer of mozzarella and parmesan cheese and chopped coriander leaves.

5. Put it back into the oven for 5 minutes until the cheese melts and it's ready to be served.
