Cold Lettuce Rolls

A light, delicious and refreshing snack for any time of the day.A light, delicious and refreshing snack for any time of the day.These light and tasty cold rolls are perfect for our hot weather.  There isn't much cookin g to it, and it makes a refreshing and light meal if you want something easy on the system.

Serving: 6 - 8 rolls

Preparation Time: 30 minutes
Cooking Time: 45 minutes

Ingredients:
600g mince chicken
1/3 carrot, julienned
1/3 cucumber, julienned
½ capsicum, julienned
2 eggs, beaten
Lettuce cups or large pieces of lettuce leaves
2 pips of garlic, chopped
4 tbspn of soy sauce
4 tbspn of sugar
½ tbspn dark soy sauce
Generous dash of white pepper
1 tsp cornflour, mix with a little water into a paste
2 tsp oil
2 tsp sesame oil

Method:

1. Heat some oil in a wok and pour half the beaten egg mixture to make a thin omelet.  When cooked, remove and repeat to make the 2nd omelet.  Cut the omelet into thin strips.

2. Heat the remaining oil and sesame oil and fry the garlic until fragrant and golden.  Add in the minced chicken and fry on high heat until cooked.  Add in the seasonings and stir until boiling.  Add in the cornflour paste and keep stirring until the mixture thickens and turn a darker color.  The taste would also intensify.  Dish up and let it cool down.

3. To assemble the rolls, place several strips of cucumber, capsicum, carrot and omelet onto a lettuce cup.  Top with some sweet mince chicken and roll up to form a spring roll.

*This is best eaten cold.  Once the vegetables have been cut into thin strips, keep them chilled in the fridge together with the lettuce cups.  Serve them only when the mince chicken is cooked and cooled down.
