Braised Black Mussels in Spicy Tomato Concasse

Ingredients:
1 dozen black mussels
2 tbsp olive oil
2 cloves garlic, flaked
300g tomato sauce
1 sprig parsley, chopped
1 sprig oregano, chopped
250ml clam stock
½ tsp chilli flakes
1 sprig basil, torn to pieces
20g butter (optional)
Salt and black pepper to taste

Method:

1. Wash the mussels and scrub the sand and mud off the shells with the back of a paring knife. Carefully pry open the mussels and rinse.

2. Heat up a saucepan with the olive oil. Add the garlic flakes and sauté until light brown.

3. Add the black mussels and sauté for 5-10 seconds. Then, lower the heat and pour in the tomato sauce. Sprinkle the parsley and oregano and braise for 1-2 minutes.

4. Add the clam stock and continue to braise for 3-4 minutes. Add the chilli flakes and basil, and season with salt and pepper. Stir in the butter for a richer flavour. Remove from heat and serve.

Note: Garlic flakes don’t burn as easily as sliced or chopped garlic, and the flavour of the caramelised garlic flakes will seep into the tomato sauce, bringing a flavourful finish to the dish.
